Coauliflower is a rich source of nutrients such as Vitamin C. It also contains sulphurous compounds that may help to protect against various cancers including the cancer of colon. 100g of cauliflower provides more than the daily recommend intake of Vitamin C. It reduces to half on boiling.
It can also be made part of slimming diet as it contains 28 calories per serving. Although cauliflower may cause flatulence but eating it with spices such as garlic, ground coriander and cumin will ease that.
Cauliflower and other cruciferous vegetables, such as broccoli, cabbage, and kale, contain compounds that may help prevent cancer. These compounds appear to stop enzymes from activating cancer-causing agents in the body, and they increase the activity of enzymes that disable and eliminate carcinogens.
Cauliflower Recipe
Dry Cauliflower Curry/Sabzi/Bhaaji
Ingredients:
1 big cauliflower
3 tsp oil
3 onions finely chopped
2 tomatoes finely chopped
2 tsp ginger garlic paste
1 tbsp chilli powder
1/2 tsp turmeric powder
1/2 tsp coriander powder
salt to taste
Instructions:
Wash and cut cauliflower into small pieces with the stem.
Boil in water with salt for 2 to 3 minutes.
Add oil to pan and heat it.
Add chopped onions,and tomatoes to it.
Then add ginger-garlic paste till the mixture softens.
Add chilli powder,coriander powder,turmeric powder,salt.
Add cauliflower pieces in this masala and then add some water for
cooking.
cook till it becomes dry.
Garnish with coriander leaves and serve hot.
